A declared test, not a clipping measurement
Highlight protection begins with a reference and an intentional tradeoff. Reducing exposure by one stop from that reference changes the calculated setting by one stop, but it does not tell you how much headroom the camera has or whether the important bright area is already clipped. The point is to make a controlled test and inspect the actual critical highlight.
From 1/125 second, f/5.6, ISO 100, a one-stop protection test at fixed aperture and ISO is 1/250 second. Two stops is 1/500. Those settings reduce the calculated exposure, but a reflected highlight, a white subject, and the camera's processing can still behave differently. Compare the frames, inspect the relevant highlight rather than an average thumbnail, and use a bracket when a single test does not answer the decision.
